How To Make Low Carb, Low Sugar Stuffed French Toast

Making low carb, low sugar strawberry and cream cheese stuffed French toast is actually very similar to the regular version. First, you make the filling by combining cream cheese, a sugar substitute and strawberries. After the filling, you create sandwiches with the filling in the center of two slices of bread. I always choose to cut my sandwiches in half. Next, you make the egg wash, which is basically an egg mixture with milk, cinnamon and vanilla extract, then dip your cream cheese filled sandwiches in it. To finish the French Toast, you simply brown both sides in a pan, cooking it a few minutes per side.

As mentioned previously, Sola Bread is used in this recipe. Sola has a line of keto-friendly and low carb products, including sugar replacement, bread, ice cream, yogurt, granola, and bars.   • Filling
  • 1/4 cup diced strawberries

  • 8 ounce softened cream cheese

  • 2 tablespoon confectioners Swerve

  • Coating
  • 10 slices Sola bread

  • 2 large eggs

  • 1 cup milk

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/2 tablespoon butter

  • Topping (optional)
  • 5 sliced strawberries

  • 1 teaspoon sugar-free syrup

  • 1/4 teaspoon confectioners Swerve


  • In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon and salt, then set aside.
  • In a medium bowl, combine the diced strawberries with the softened cream cheese and confectioners Swerve.
  • Spread the strawberry and cream cheese mixture on 5 slices of Sola bread, then seal with the other 5 slices.
  • Place a medium non-stick skillet over medium heat and add butter.
  • Carefully dip both sides of the stuffed (not-yet French toast) sandwich into the egg wash, so that only the bread slice enters. Immediately, transfer from the bowl to the skillet.
  • Cook for 3-4 minutes until the edges become golden brown, then flip and cook on the other side for an additional 3-4 minutes. Repeat the process for the remaining 5.
  • Remove from heat and serve with strawberries, confectioners Swerve and sugar-free syrup, if desired.


  • Storage: Store any leftovers in an airtight container for up to 3 days. Reheat on a skillet for best results.
